PASSOVER STRUDEL 
DOUGH:

4 eggs
1/2 c. oil
2 c. matzoh cake meal
1 c. potato starch
1/2 c. sugar
4 tbsp. cold water
Pinch of salt

FILLING:

1 lb. walnuts, chopped
2 lg. apples, grated
1 orange rind, grated
1 lemon rind, grated
2 tbsp. matzoh meal
1/4 c. sugar
1 tbsp. cinnamon
Preserves or jelly

Beat eggs and stir in all dough ingredients. Mix and divide into 5 portions. Mix together all filling ingredients except jelly or preserves. Roll out 1 portion dough between 2 wax sheets. Spread jelly or preserves and 1/5 of filling mix. Roll up and place on oiled cookie sheet. Do this to other 4 portions. Cut halfway through the rolled up strudel and sprinkle with cinnamon-sugar combination if desired or bake plain. Bake on cookie sheet for 1 hour at 350 degrees. Slice through completely as soon as removed from oven. Recipe makes 40 slices of strudel.
