BASIL CHICKEN 
2 chicken breasts
3 tbsp. butter
1/2 c. whole tomatoes, drained
2 potatoes, peeled and quartered
1/2 tsp. basil
Pinch of rosemary
Pinch of black pepper
Pinch of white pepper
2 shallots, chopped
2 tbsp. white wine

Saute chicken in butter about 10 minutes. Add tomatoes, potatoes, basil, black pepper, white pepper and shallots. Saute about 10 minutes. Add wine, saute about 5 minutes longer. Serves 2. About 350 calories each.
