BACKWOODS POTATO WRAPS | |
2 lbs. good hickory smoked bacon, or home-cut is better 3 or 4 very large spuds paprika garlic powder parsley flakes black pepper oregano chunky Italian dressing or any kind 1 large onion (optional) Cut potatoes into chunks, I quarter the spud, then cut 1/2 inch thick pieces off each quarter. Take a one pound bacon package and cut in half. For each chunk of tater, wrap bacon around and hold in place with a tooth-pick. Place them in a pan, pour Italian dressing all over the top of them making sure you coat each one. Add paprika, garlic, pepper and any preferred herbs and seasonings. Bake at 350°F for 45 minutes to an hour. I usually cook um' til the bacon has a little black tinge on it... then I know the spuds are done. Enjoy!! Submitted by: Vincent-Lee |
