STUFFED MEAT LOAF 
STUFFING:

1 (16 oz.) bag mixed vegetables, thawed and well drained
1 egg
2 tbsp. bread crumbs

MEAT:

1 1/2 lb. lean ground beef
1/2 c. chopped onion
1 tsp. salt and pepper
1/2 tsp. garlic
1 egg
1/4 c. catsup
1/4 c. oatmeal
1/4 c. bread crumbs

Combine meat mixture and spread half in a 9x9x2 inch loaf pan. Combine stuffing mixture and spread over meat mixture. Spread remaining meat mixture over stuffing. Bake at 375 degrees for 45-55 minutes.
