CORNBREAD SALAD 
1 c. cornmeal
2 eggs
8 oz. sour cream
1 tbsp. sugar
1 stick butter
Shredded cheese
1 c. chopped onion
1 c. bell pepper
1 c. diced tomato
1 c. sweet pickle relish
1 c. mayonnaise plus 1 tbsp. sugar

Mix first 5 ingredients and bake as you would any cornbread. Let cool completely. Mix all other ingredients except mayonnaise and layer alternately with cooled, crumbled cornbread.

Mix mayonnaise with 1 tablespoon sugar and spread over top. Sprinkle with cheese.
