CHICKEN STRATA 
16 slices bread
4 c. cooked diced chicken
1 lg. onion, chopped
1 lg. green pepper, chopped (optional)
1 c. mayonnaise
1/2 tbsp. salt
1/8 tsp. pepper
3 eggs, slightly beaten
3 c. milk
1 can cream of chicken soup
1 can cream of mushroom soup
1 c. sharp cheese, grated

Butter 4 slices of bread; cut into 1/2 inch cubes and set aside. Cut remaining bread into 1 inch cubes; place half in 13 x 9 x 2 inch baking pan. Combine chicken, vegetables, mayonnaise and seasonings; pour over bread cubes. Top with remaining cubes. Combine eggs and milk; pour over bread cubes. Cover and chill 1 hour or overnight. Spread soup on top; cover with buttered bread cubes. Bake 325 degrees for 50-60 minutes. Sprinkle with cheese during final 15 minutes. Yield: 12 servings.
