BLACK BEAN AND BELL PEPPER SALAD 
1 lb. dried black beans
1 c. chopped red pepper
1 c. corn kernels, fresh or canned
1/2 c. chopped yellow pepper
1/2 c. chopped green pepper
1/2 c. minced red onion
6 tbsp. olive oil
4 tbsp. wine vinegar
Salt and pepper
Lg. pinch cayenne pepper

Clean beans, cover with 2 inches of water and soak 4 hours or overnight. Drain, simmer gently, partly covered, in fresh water for about 50 minutes, until they are tender but still hold their shape. Drain and cool. Mix beans with remaining ingredients and refrigerate if desired.
