2 2/3 c. sifted flour 1/2 tsp. salt 1 c. lard or Crisco 3 egg yolks 1 1/4 tbsp. lemon juice 1/4 c. water 8 apples, cored, peeled and sliced (Granny Smith green) 1 c. sugar 2 tbsp. flour 1/2 tsp. cinnamon 1 c. confectioners' sugar 2 tbsp. butter 1/2 tsp. vanilla 2 tbsp. milk Sift together flour, and salt and cut in lard as for a pie crust. Mix egg yolks, lemon juice and water and sprinkle over flour mixture. blend lightly. Divide dough in half. Roll first piece to fit bottom and sides of a 9x13 inch pan. Arrange sliced apples in crust lined pan. Combine sugar, 2 tbsp. flour and cinnamon and sprinkle over apples. Roll remaining dough to fit top and arrange over filling. Seal edges, prick with fork tines and bake in a 400 degree oven for 40 minutes. Remove from oven and cool. Frost top with mixture of confectioners' sugar, butter, vanilla and milk. NOTE: This dough is hard to work with. Its easier if you roll dough up on rolling pin to lift, and then unrolling into pan. You will probably have to patch it a lot, but don't worry. No matter how much patching you do you can't hurt it and it will taste wonderful. |
