SWEDISH SPRITZ COOKIES 
2 1/2 c. flour
3/4 c. sugar
1/2 tsp. salt
1/2 tsp. baking powder
1 c. butter at room temperature
1 egg plus an extra yolk
1 tsp. almond extract

Sift flour, sugar, salt and baking powder in a bowl. With 2 knives cut the butter into the dry mixture until dough is full of very fine lumps. Add egg mixture and almond and beat very well. Fill cookie press. Form cookies in desired shape on ungreased cookie sheet. Bake at 375 degrees for 10-12 minutes. Makes about 4 dozen cookies.
