ONE - BOWL PUMPKIN DESSERT 
2 1/2 c. sifted flour
2 c. sugar
3/8 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 tsp. salt
1 1/2 tsp. cinnamon
3/8 tsp. ginger
1/2 c. soft shortening
1 1/2 c. cooked, mashed pumpkin
1/2 c. water
2 eggs
1 c. raisins
1/2 c. nuts

Sift dry ingredients together into mixing bowl; add shortening, pumpkin and water. Beat 2 minutes on medium speed of electric mixer, until well mixed. Add eggs, beat 2 more minutes. Stir in raisins and nuts.

Pour into a 1 1/2 quart ring or turk's head mold that has been well greased and lightly dusted with fine, dry bread crumbs. Bake in a moderate oven (350 degrees) for about 45 minutes, or until cake tests done. Serves 8.
