CHINESE CHICKEN AND RICE 
1/4 c. oil
3 eggs, beaten
1 med. onion
1/2 green pepper, cut into strips
1 pkg. Uncle Ben rice
1 1/2 c. cooked & shredded chicken
2 chicken bouillon cubes, dissolved in 2 c. water
2 tbsp. soy sauce

Heat 2 tablespoons oil in skillet. Cook eggs, pancake style; remove and keep warm. Add remainder oil, onion, green pepper and chicken. Cook 5 minutes. Add bouillon broth and bring to a boil. Cover and simmer with the rice for 25 minutes. Slice egg patties and add egg and soy sauce to rice and serve hot.
