PINEAPPLE CREAM DRESSING (for
fruit)
 
3 egg yolks
1/2 c. sugar
5 tbsp. lemon juice
1/2 c. pineapple juice
Pinch of salt
1/2 c. heavy cream (whipped)

Beat egg yolks and sugar together. Add fruit juices and salt and cook in the top of a double boiler until mixture thickens. Cool and fold in whipped cream. Makes 1 1/2 cups.
