CHICKEN STIR FRY 
1 3/4 lbs. cubed chicken breast, cooked
2-4 tbsp. soy sauce
3/4 tsp. ground ginger
2 tbsp. oil
1 clove garlic, minced
2 c. Bok Choy
1/2 c. celery, chopped
2 c. broccoli
1/2 c. onion, chopped
1/2 c. green pepper, chopped

Cook vegetables and spices until about done. Then add chicken and 1/2 cup chicken broth. Cover and cook until chicken is heated and serve over rice.
