CALIFORNIA CASSEROLE 
1 med. onion, chopped
1 lb. ground beef or pork sausage
1 (1 lb., 2 oz.) can whole tomatoes
1 tsp. salt or to taste
1 tsp. crushed oregano
1/8 c. salsa
6 corn tortillas
1 c. shredded Monterey Jack cheese
1 ripe avocado, sliced

In large saucepan over medium heat, brown onion and meat; drain fat. Add tomatoes, salt, oregano and salsa; mash to make sauce. Simmer, uncovered 15-20 minutes; set aside to cool.

Preheat oven to 325 degrees. On bottom of 13 x 9 x 2 inch baking dish, layer 6 tortillas. Spoon 1/2 of meat sauce over tortillas; top with 1/2 of cheese. Repeat layers. Bake casserole 25 minutes. Remove from oven; top with avocado slices.
