LEMON APPLESAUCE CAKE 
1 c. Stone Buhr 7 Grain cereal, uncooked
1 c. unsweetened applesauce
1 c. whole wheat flour
1/2 c. oat bran
1 tbsp. baking powder
1 tsp. cinnamon
1 tsp. lemon rind, grated
1/2 c. unfiltered apple juice
1 env. prepared Butter Buds
2 egg whites
1/2 c. raisins
1/2 c. chopped nuts

One hour before starting, combine cereal and applesauce. Mix, cover, and set aside at least 1 hour or overnight. Preheat oven to 350 degrees. In a medium bowl, combine apple juice, Butter Buds, egg whites, raisins, and nuts; mix well. Add in dry ingredients and applesauce mixture, mixing well. Pour into 8 or 9 inch cake pan sprayed with non-stick. Bake at 350 degrees for 30 minutes. Cool before slicing. Serves 14.
