BROCCOLI RICE CASSEROLE 
1 c. uncooked rice (instant)
1 med. onion
1 can cream of chicken soup
1/2 c. milk
1/2 lb. Velveeta cheese
2 boxes chopped broccoli, thawed

Cook rice and 2 cups water. Be sure all water is cooked out. Set aside.

Saute onion in melted butter or oil until tender. Add soup, milk and melted cheese. Then add broccoli (thawed) and rice to mixture. Salt and pepper to taste. (May be frozen at this point.)

Bake in greased baking dish for 45 minutes at 350 degrees. May be divided into 2 small baking dishes. Also may be made and frozen. Allow longer cooking time, if frozen.

Allow time to thaw.
