ORANGE COCONUT COOKIES
(Diabetic)
 
1 3/4 tsp. liquid sweetener
1 1/4 c. orange juice
1 tsp. vanilla
4 tbsp. butter
1 c. flour
1/4 tsp. salt
1/4 tsp. baking powder
4 tbsp. shredded coconut

Combine sugar substitute with orange juice and liquid; knead in the coconut. Shape into roll and wrap in wax paper. Chill until firm. Cut into thin slices. Place on cookie sheet. Bake in hot oven (400 degrees) until brown around edges, approximately 10 minutes.
