“PECAN BRITTLE” IS IN:

PECAN BRITTLE 
2 cups pecans
2 cups sugar
4 tsp. salt
4 tsp. baking soda
1 tsp. vanilla

Spread pecans on buttered cookie sheet. Dissolve sugar in iron skillet until golden brown (300-310°F on candy thermometer).

Just before all sugar has turned golden, remove from heat and stir until completely dissolved.

Quickly add mixture of salt, baking soda and vanilla. Pour immediately over pecans. Break into pieces as soon as it is brittle.

Cooks Note: Use of a candy thermometer is recommended.

Makes 2 pounds.
