CANTONESE SOY SAUCE CHICKEN 
1 lb. chicken (I use separated wings and drumsticks)
1/2 cup regular soy sauce
1 to 1 1/2 cups water (depending on how diluted you want the sauce)
1-inch knob of ginger (approx.)
1 garlic clove
1 tbsp. sugar

Using a pot (preferably an enamel cast-iron pot), heat the chicken, soy sauce, and water over medium heat. After bringing it to a simmer, set the heat to very low and cover the pot.

Peel and chop the ginger and crush the garlic. Add the ginger, garlic, and sugar to the pot. Stir and let the chicken simmer for about 30 minutes.

Serve with your favorite cooked rice.
