PEACH COBBLER | |
1 c. sifted all-purpose flour 1 tbsp. sugar 2 tsp. Calumet baking powder 1/4 tsp. salt 1/4 c. shortening 1/3 c. milk 1 (29 oz.) can sliced peaches 2 tbsp. sugar 1 tbsp. minute tapioca 1 tbsp. lemon juice 1/8 tsp. ground nutmeg 1/4 tsp. almond extract 1 tbsp. butter Sift flour with 1 tablespoon of sugar, the baking powder, and salt. Cut in shortening until mixture resembles coarse crumbs. Add milk; stir with fork until soft dough is formed. Pat or roll dough on lightly floured board until dough will fit top of a 1 1/2- quart baking dish. Dot with butter; adjust dough on hot fruit mixture, opening slits to permit escape of steam. Bake at 400 degrees for 25-30 minutes or until top is golden brown. |
