CHINESE FRIED RICE | |
3 c. cooked cold rice 1 c. cooked chicken or shrimp 1/2 tsp. pepper 2 green onions, snipped 3 tbsp. vegetable oil 3/4 tsp. salt 2 tbsp. soy sauce 2 eggs Heat oil in a deep frying pan. Add meat or fish and cook 1 minute. Add eggs, salt, and pepper. Cook, stirring constantly, until well mixed. Add rice and soy sauce and cook, stirring constantly for about 5 minutes, until rice is thoroughly heated. Garnish with green onions. Serves 4-6. |
