HOT MILK SPONGE CAKE 
2 eggs (can use egg substitute)
1/2 c. sugar
1 tsp. vanilla
1 c. flour
1 tsp. baking powder
1/4 tsp. salt
1/2 c. milk (lowfat)
1 tsp. butter

Preheat oven to 325 degrees. In mixing bowl, beat well 2 eggs, and add sugar and vanilla. Beat until light. Combine flour, baking powder, and salt and by hand fold dry ingredients into egg mixture. Bring to a boil in saucepan, milk and butter and slowly add to batter, stirring gently. Pour into Pam sprayed 9 x 9 inch pan. Bake for 30 to 35 minutes.
