NORWEGIAN APPLE CAKE 
2 lg. eggs
1 1/4 c. sugar
1 stick butter
2/3 c. light cream
3/4 c. flour
3 tsp. baking powder
3 to 4 cooking apples

Grease and flour 8 x 12 inch roasting pan. Beat egg and 1 cup sugar until mixture is thick and creamy. Put the butter and milk into a pan. Bring to a boil and stir, while boiling, into the eggs and sugar mixture.

Sift the flour and baking powder and fold carefully into the batter so there are no lumps. Pour the mixture into the roasting pan. Peel core and slice the apples. Arrange over the batter. Bake at 400 degrees for 20 to 25 minutes.
