LUCY'S OATMEAL CHOCOLATE CHIP
COOKIES
 
1 1/4 c. softened butter
3/4 c. packed brown sugar
1/2 c. sugar
1 egg
1 tsp. vanilla
1 1/2 c. unsifted flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/8 tsp. nutmeg
3 c. Quaker oats
2 c. semi-sweet chocolate chips

Heat oven to 375 degrees. Cream butter with sugar until light and fluffy. Beat in egg and vanilla. Stir flour with baking soda, salt and spices; add to creamed mixture; mix well. Stir in oats. Fold in chocolate chips. Drop by rounded tablespoons onto ungreased cookie sheets. Bake 8 to 9 minutes for chewy cookies and 10 to 11 minutes for crisper cookies. Yield: 6 dozen 2" cookies.
