PUMPKIN CHIP COOKIES 
4 c. unsifted flour
2 c. quick oats
1 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
1 1/2 c. soft butter
2 c. packed brown sugar
1 c. granulated sugar
1 egg
1 tsp. vanilla
1 (16 oz.) can solid pack pumpkin
1 c. chocolate morsels or raisins as desired
Icing or smooth peanut butter
Candy corns

Combine dry ingredients and set aside. Cream sugars and butter. Add egg and vanilla, beating well. Alternate adding dry ingredients and pumpkin. Stir in chocolate chips or raisins. Drop 1/4 cup dough onto lightly greased cookie sheet; spread into pumpkin shape, adding a little more dough for stem, if necessary.

Bake at 350 degrees for 20-25 minutes until firm and lightly browned. Cool on racks. Decorate to look like Jack-O-Lanterns using icing or peanut butter to fix candy corns. Makes about 32 large cookies.
