TURKEY VEGETABLE SOUP | |
1/4 c. butter 2 med. onions, chopped 2 tbsp. flour 1 tsp. curry powder 3 c. chicken broth 1 c. diced potatoes 1/2 c. thinly sliced carrots 1/2 c. sliced celery Salt & pepper 2 tbsp. chopped fresh parsley 1/2 tsp. sage or poultry seasoning 2 c. cubed cooked turkey 1 1/2 c. half & half 10 oz. frozen chopped spinach Using a large saucepan saute onions in butter until translucent (about 10 minutes). Stir in flour and curry powder. Cook 2-3 minutes. Add all but turkey, spinach and half & half. Bring to a boil. Reduce heat to low. Cover and simmer for 10 minutes. Add turkey, half & half and spinach. Cover and continue simmering until heated through (about 7 minutes). Season with salt and pepper. Serve hot. |
