2 lb. ground beef 2 eggs 1/2 c. tomato sauce, juice or puree 3/4 tsp. dried oregano 3/4 tsp. dried basil 3 cloves garlic, minced 1/4 tsp. salt 1/4 tsp. black pepper 3/4 cup soft bread crumbs 2 tbsp. fresh minced parsley 8 thin slices fully cooked lean ham or paper-thin prosciutto 1 1/2 c. shredded mozzarella cheese 3 slices provolone cheese, halved In a large bowl. combine eggs, tomato, herbs, garlic, salt and pepper. Add beef, bread crumbs and parsley. Mix well. On a large sheet of heavy-duty aluminum foil or wax paper, pat out meat mixture into a 10x12-inch rectangle. Top with a layer of ham or prosciutto and top with shredded mozzarella cheese, leaving a 1/2-inch margin along edges. Roll the mixture up, as you would a jelly roll, starting with the short end and peeling away the foil or wax paper to remove it while rolling. Place the meat roll on a greased baking sheet with the seam facing down. Pinch the ends closed. Bake, uncovered, in a preheated 350°F oven for 1 hour and 10 minutes. Place slices of provolone cheese over the top of the roll and bake for another 5 minutes or until cheese has melted.
