BASQUE POTATOES 
3 lg. potatoes, peeled & sliced
1 c. pimento, chopped
1 lg. onion, chopped
2 cloves garlic, pressed
2 tbsp. chopped parsley
2 tbsp. olive oil
1 c. chicken broth
Salt & pepper to taste

Saute potatoes, onions and garlic in olive oil several minutes or until browned. Add pimento, chicken broth, parsley, salt and pepper. Simmer slowly until soft. Ideal side dish for any main dish. Very tasty!
