YEAST MINI-LOAVES | |
1 pkg. dry yeast 1 1/4 c. warm water 4 1/2 c. flour, all-purpose 2 tsp. salt (Kosher) 1 egg 1 tbsp. water Sprinkle yeast over 1/4 cup of warm water in cup. Let stand 10 minutes to soften. Combine 3 1/2 cups flour and salt in a bowl. Stir. Pour yeast into flour, add 1 cup water. Stir to form ball. Knead dough lightly on floured surface 10-15 minutes. Lightly grease bowl. Add dough, cover. Rise in warm place until double, 1 1/2 -3 hours. Punch down half dough. Roll into 12 inch rope, cut twelve 1 inch pieces. Roll into smooth ball. Place on greased pan. Rise 30 minutes. Combine egg and water. Brush tops. Bake 400 degrees 15 minutes. |
