APPLE DUMPLINGS | |
2 c. sifted flour 2 tsp. baking powder 1 tsp. salt 1/2 c. shortening 2/3 c. milk 8 sm. apples, pared and cored 1/2 c. sugar 1/4 tsp. cinnamon 2 tbsp. butter 1/2 c. brown sugar, firmly packed Dash of nutmeg and cinnamon 1/3 c. butter 1 1/3 c. hot water Mix first 5 ingredients as you would for biscuits, and roll 1/8 inch thick, cut in circles, large enough to enclose a small apple. Place apple on circle and fill cavity with mixture of sugar and cinnamon and dot with butter. Place dumplings in pan with joined edges under allowing plenty of space between each. Combine sugar, nutmeg, cinnamon, butter and water and pour in pan with dumplings. Bake in hot oven 450 degrees for 15 minutes. Then decrease heat to 350 degrees and bake 25 minutes or until tender. Makes 8 dumplings. |
