CARROT BREAD 
1 c. sugar
3/4 c. Wesson oil
1 1/2 c. flour
2 eggs
1/2 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1 1/2 c. grated carrots
1/2 c. pecans, finely chopped
1 tsp. vanilla

Cream sugar and oil well. Add eggs, one at a time, and mix. Add salt, soda, cinnamon, and flour; beat. To the mixture, add carrots and chopped pecans. Grease and flour a loaf pan and line it with waxed paper. Pour bread into pan and bake in a 350 degree oven for 1 hour. Let cool 10 minutes and remove from pan.
