STUFFED ZUCCHINI 
1 lb. lean sausage, sauteed
3 tbsp. chopped parsley
2 tbsp. grated Romano or Parmesan cheese
1 sm. onion, chopped
2 cloves chopped garlic
3 tbsp. bread crumbs
2 eggs
Center pulp of zucchini, chopped fine
1/2 c. Mozzarella cheese

Scoop out pulp from zucchini with small spoon; save. Brown sausage in fry pan. Add onions and garlic. Cool. Add all other ingredients. Fill zucchini shells with pulp mixture and sprinkle with more Romano cheese. Place sliced zucchini in baking dish. Bake 20-25 minutes or until zucchini have a light golden crust.
