FISH CHOWDER | |
1 lb. white fish pieces (cod, haddock, etc.) 2 c. water 1/2 - 1 tsp. salt 4 med. potatoes, peeled and cubed 1/2 lb. bacon, cut into sm. pieces 1 lg. onion, diced 1 1/2 c. half and half 1 tsp. sweet basil 1 tsp. thyme 1/2 tsp. allspice Salt and pepper to taste Place fish, salt and water in large saucepan. Bring to boil then reduce heat to low and simmer fish for 7 minutes. Remove fish from pan to plate to cool. Put potatoes in pan, bring to boil and cook until pieces are soft but not mushy. While potatoes are cooking, saute onion and bacon in small fry pan. Add fish, onion and bacon to saucepan and reduce to simmer. Stirring gently, add half and half and spices. Cook over low heat 8 to 10 minutes. Do not boil. |
