TURKEY SOUP 
Carcass from 1 turkey
1 med. onion, cut up
1 c. chopped celery
4 to 5 c. water
Salt and pepper to taste

Bring all ingredients to a boil, simmer for 1 hour. Let cool. Remove turkey from carcass. Strain broth and combine with turkey meat. Serve with rice or macaroni.
