PUFFY BROILED SOLE 
4 fillets of sole
1 sm. onion, thinly sliced
1 c. mayonnaise
4 tbsp. grated Parmesan cheese
Lemon wedges

Preheat broiler. Rinse fillets and pat dry. Arrange in a single layer in a broiler safe baking dish. Separate onion into rings and arrange over fillets. Combine mayonnaise and cheese and spread over fish. Cover dish with foil but don't let foil touch fish.

Broil, covered for 10 to 15 minutes or until fish is almost done. Remove foil and broil until topping is puffed and browned and bubbly, 2 to 3 minutes. Serve with lemon wedges.

P.S. The topping really does puff up under the broiler!
