REFRIGERATED COCONUT FRUIT
COOKIES
 
12 sugar substitutes
1/4 c. unsweetened fruit juice
1 tsp. vanilla extract
1/4 tsp. baking powder
1/4 tsp. salt
1 c. flour
1/4 c. butter
2 tbsp. coconut

Combine sweetener, juice, and vanilla; sift together baking powder, salt, and flour and then cut in the butter. Add the liquid ingredients. Mix well. Work in coconut. Make dough into a roll about 2 inch in diameter and place in waxed paper in refrigerator until well chilled and firm. Slice into 1 1/2 dozen cookies and place on ungreased cookie sheet. Preheat oven to 400 degrees. Bake 7-8 minutes.
