CHICKEN IN ORANGE SAUCE 
1/2 c. flour
2 tsp. salt
1 tsp. pepper
4 lb. cut up chicken
1/4 c. peanut oil
2 c. orange juice
2 tbsp. dark brown sugar
2 tbsp. white vinegar
1 tsp. nutmeg
1/2 tsp. dried basil
2 cloves garlic
3 peeled oranges, cut in sections

Coat pieces of chicken with flour (salt and pepper added). Heat oil in frying pan and saute chicken. When cooked, remove to casserole dish. Add all other ingredients to casserole. Cover and simmer gently 50 minutes. Add orange sections and cook 5 minutes more. Serves 4.
