GRANDMOTHER'S DATE JIM JAMS 
1 c. butter
1 c. brown sugar
2 c. flour
1/2 tsp. salt
1 tsp. baking soda
1/2 c. sour cream
2 c. oatmeal

Cream together butter, brown sugar. Add flour, salt and soda. Add sour cream to this until blended and then stir in oatmeal. Chill dough 2 hours or until firm enough to handle.

FILLING:

1 lb. dates
1/3 c. lemon juice
Water as needed

While dough is chilling, cut dates and combine them in a saucepan with the lemon juice. Simmer until dates are soft, adding water as needed. Roll out dough and using a cookie cutter (I use a round one) cut circles, and bake at 350 degrees for about 7 minutes. Cool and fill with the date mixture, topping dates with another cookie.
