CANDIED SWEET POTATOES 
2 lb. sweet potatoes (about 6 med.)
1/2 c. brown sugar, packed
3 tbsp. butter
3 tbsp. water
1/2 tsp. salt
Miniature marshmallows, optional

Boil sweet potatoes, in skins until tender, peel, cut into 1/2 inch slices.

Mix sugar, butter, water and salt in 8 inch skillet. Cook over medium heat, stirring constantly, until smooth and bubbly. Add sweet potato slices. Stir gently until glazed and heated through. May sprinkle with miniature marshmallows. 4-6 servings.
