CORN FRITTERS 
Vegetable oil for deep frying
1 c. sifted all-purpose flour
1 tbsp. sugar
1/2 tsp. baking powder
1/2 tsp. salt
1 egg
1/2 c. corn kernels
1/4 c. milk
Confectioners' sugar

1. Pour oil into deep heavy 3 quart saucepan to depth of 3". Heat over medium-high heat until deep-fry thermometer registers 350 degrees.

2. Sift flour, sugar, baking powder and salt into medium bowl. Add egg, corn and milk; stir until well blended.

3. Drop batter into hot oil by teaspoonfuls; do not crowd pan. Fry, turning once, until fritters are golden brown, 1 1/2 to 2 minutes, adjusting heat if necessary to maintain frying temperature of oil. Remove fritters with wire strainer to paper toweling to drain; keep warm in oven set at lowest setting. Repeat with remaining batter. Serve hot, sprinkled with confectioners' sugar.
