STUFFED FLANK STEAK 
1/3 c. chopped onions
2-3 tbsp. butter
4 c. dry bread crumbs
1/2 tsp. poultry seasoning
Salt to taste
Pepper to taste
2 flank steaks (approximately 1 3/4 lbs.)

Cook onions until golden brown; add bread cubes, salt, poultry seasoning, and pepper; toss in skillet until toasted. Spread stuffing over steak and roll up like jelly roll. Fasten with toothpicks. Roll steak in flour and brown in 4 tablespoons shortening and brown on all sides. Sprinkle with salt and pepper. Place in Dutch oven with: 16 oz. can tomatoes 1/2 c. chopped onion 1/4 c. ketchup 1/2 c. chopped green peppers 4 oz. can sliced mushroom and liquid

Add green peppers and mushrooms last 15 minutes. Temperature: 300 degrees. Time: 1 hour and 45 minutes.
