CREAM OF BROCCOLI AND CHEESE SOUP | |
2 c. chopped celery 1 c. finely chopped onion 1 (10 oz.) pkg. chopped broccoli 1 c. cottage cheese 2 c. whole milk 1 can cream of chicken soup 1/2 tsp. salt (if desired) 1/8 tsp. white pepper Cook celery, onion and broccoli in small amount of water in 2 1/2 quart covered casserole in microwave on HIGH for 6 minutes, stirring after 3 minutes. Set aside. Blend cottage cheese in blender or food processor until very smooth; slowly add milk while continuing to blend. Add chicken soup to cheese/milk mixture; blend, add mixture to cooked, undrained vegetables. Microwave on HIGH until heated through (about 3 minutes) WITHOUT BOILING. Add salt and pepper. Best if served immediately, does not reheat well. The flavor is still good, but the consistency is not as nice. Yield: 6 servings. |
