CARROT-RAISIN SALAD 
4 c. coarsely shredded carrots
1/2 c. raisins
3 tbsp. reduced-calorie mayonnaise
1 (8 oz.) can unsweetened crushed pineapple, undrained

Combine all ingredients in a bowl; toss well. Cover and chill 1 hour. Yields four 1 cup servings.
