STRAWBERRY GRIDDLE COOKIES 
1 (8 oz.) pkg. (1 1/3 c.) pitted dates, snipped or chopped
1/2 c. flaked coconut
1/2 c. sugar
4 tbsp. butter
1 slightly beaten egg
Dash salt

1 1/2 c. crisp rice cereal
1/2 c. chopped walnuts
1 tsp. vanilla

2 jars fine red sugar crystals
1 tube green decorator frosting

In a large skillet combine dates, coconut, sugar, butter, eggs and salt. Cook and stir over medium heat until mixture thickens and bubbles, 5 to 10 minutes. Remove from heat. Stir in cereal, nuts, and vanilla. Cool 10 minutes.

To form cookies use 1 tablespoon mixture, form into strawberry shape. Roll in red sugar trim with green frosting leaves or use green sugar to form trees - yellow icing or round colored sprinkles for balls. Makes 2 1/2 dozen cookies.
