LEMON EXTRACT CAKE | |
1 lb. butter 2 1/3 c. sugar 6 eggs 3 oz. lemon extract 4 c. sifted flour 1 1/2 tsp. baking powder 1/2 tsp. salt 1/2 lb. candied cherries 1/4 lb. candied pineapple 1/4 lb. white raisins 1 lb. shelled pecans (4 c.) Cream butter with sugar. Add eggs and beat well. Add lemon extract and blend. Sift dry ingredients together and add to the creamed mixture. Add fruit and nuts. Bake in loaf pans at 300 degrees for 1 1/2 to 2 hours. In the tube pan, bake for 2 1/2 to 3 hours. |
