PINEAPPLE NUT BREAD 
1/2 c. raisins, in boiling water
1 3/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
3/4 c. nuts
3/4 c. sugar
3 tbsp. shortening
2 eggs
1 (8 1/2 oz.) crushed pineapple (do not drain)
2 tbsp. sugar
1/2 tsp. cinnamon

Mix sugar, shortening and eggs; add pineapple. Add flour, baking powder, salt, soda, raisins and nuts. Pour into a bread loaf pan and top with sugar and cinnamon. Mix this together.

Bake at 350°F for 60 to 70 minutes. Makes 1 loaf.
