DESSERT FOR A CROWD 
3 egg whites
1/4 tbsp. baking powder
1 c. minus 2 tbsp. sugar
40 ground Ritz crackers
1 c. ground walnuts
1 (8 oz.) cream cheese
1 container Cool Whip
1 lb. 4 oz. can crushed pineapple
1 lb. 4 oz. fruit cocktail (removing grapes)
1 can flaked coconut

Beat until foamy: egg whites, baking powder. Gradually add sugar; beat until stiff. Fold in ground Ritz crackers with ground walnuts. Spread in greased 13x9x2 pan. Bake 20 minutes at 350 degrees.

While baking, cream the cream cheese; add Cool Whip. Fold in drained pineapple plus fruit cocktail (remove all grapes). Spread over cooled base. Refrigerate overnight. Add and sprinkle flaked coconut. Enjoy!
