DATE - NUT LOAF | |
1 c. flour 4 eggs, beaten light 1 c. sugar Dash salt 4 pkg. dates (2 lb.) 1 lb. pecans 1 heaping tsp. baking powder 2 tsp. vanilla Pit dates. Chop flour, dates and chopped pecans with flour to which the baking powder and salt has been added. Add eggs and sugar (beaten together). Blend well and pat into loaf pan. (I line pan with wax paper.) At least 2 inches deep. Bake slowly, 1-1 1/2 hours. P.S. Prepare dates, nuts and everything before beating eggs. Store as you would fruit cake. |
