INDIAN APPLE CAKE 
1 c. shortening
1 1/2 c. brown sugar
2 eggs
2 c. flour
1 tsp. baking soda
2 tsp. cinnamon
2 med. apples, diced (reserve 2 to 3 tbsp. for topping)
1 c. buttermilk

Mix shortening and sugar, add eggs. Sift in dry ingredients; add 1 cup buttermilk, then add apples. Place in 9 x 13 inch greased pan. Place topping on and bake 40 to 45 minutes at 350 degrees.

TOPPING:

1/2 c. brown sugar
1/2 c. chopped nuts
1/2 tsp. cinnamon
Reserved apple
