LEMON ALMOND CAKE | |
1 box yellow cake mix 1 pkg. (3 oz.) lemon flavored gelatin 2 tsp. almond extract 4 eggs 1/2 c. vegetable oil 3/4 c. water 1/4 c. butter, melted and cooled In large mixing bowl combine cake mix, dry lemon gelatin and remaining ingredients in order given. Beat 10 minutes at medium speed. Pour into greased and floured loose bottom 10 inch tube pan. Bake at 325 degrees for 50 to 60 minutes. Let stand 10 minutes. Lift out carefully and cool. Spread with fluffy icing. ICING: 1 unbeaten egg white 1/4 tsp. cream of tartar 3/4 c. sugar 1 tsp. vanilla 1/4 c. boiling water Combine ingredients in small deep bowl. Add the boiling water and beat to stiff peaks. Frost cake and sprinkle with flaked coconut if desired. |
